Poparuba believes passionately in following a nutrient-dense, low-glycemic approach to eating. In other words, we believe in eating nutritious foods that don’t cause blood sugar and insulin level “spikes.” High-glycemic foods (foods high in starchy carbohydrates and sugar) break down quickly into glucose, following ingestion, causing these harmful spikes which are directly linked to weight gain, diabetes and a wide variety of other diseases. Conversely, nutrient-dense, low-glycemic foods, including Poparuba products, help to control and stabilize blood sugar and insulin levels, which we firmly believe is an important key to optimal health and wellness.
In addition to banishing the starchy carbohydrates and sugar that typically befall many well-loved traditional foods and snacks, we are also dedicated to freeing our culinary creations of gluten. Gluten, the protein found in wheat, barley, rye and sometimes oats, is a known food allergen. Gluten insensitivity and intolerance awareness is extremely important to us. Further, Poparuba believes that following a gluten-free diet has many benefits even for individuals who are not allergic to gluten.
One reason for our position is that research shows how gluten actually affects the same receptors in the brain as opiate class drugs promoting an addictive response. This literally means that wheat and other gluten-containing grain based foods have an addictive quality, leading to overconsumption, low satiety, weight gain and other deleterious effects of overconsumption.
Another reason is that modern crops of wheat and gluten-containing grains contain far more gluten than ancient grain crops, as a result of genetic manipulation. This means that eating glutenous grains automatically equals the ingestion of far more gluten than our bodies are set up to handle (which many believe is cause of the recent rise in gluten intolerance.) Gluten is also known to disrupt immunity and to cause micro or cellular inflammation response in normal individuals, leading to accelerated aging and onset of disease.
Instead of using high glycemic grain flours, starch and sugar, Poparuba incorporates a variety of low glycemic and nutrient rich ingredients that actually promote health. We use whole foods like garbanzo beans, almonds, coconuts and seeds instead of flour. We sweeten our products with all natural and sustainable Xivia brand Xylitol, a sweetener that has roughly half the calories of sugar and which comes from the “xylan” (wood pulp) found in birch trees grown in sustainable forests. Xivia-xylitol actually kills bacteria instead of feeding it, as sugar does. One such antibacterial quality of Xivia, known as “anti-cariogenic,” means it is helpful in preventing tooth decay. It is also helpful in preventing ear, nose and throat infections, a benefit partially responsible for the popularity of xylitol-based chewing gum. Since Xivia-xylitol is metabolized independently of insulin, it is a safe sugar-alternative for diabetics or anyone avoiding sugar.
In addition to these, we incorporate as many other health promoting and protective ingredients as we can possibly and reasonably fit into the mix. We use organic Sicilian lemon juice, safflower oil, pumpkin, dark cocoa and dark chocolate which are all high in bioflavonoids and antioxidants
